I have been scrubbing pipes, dropping new temperatures and trying to find my own approach of coffees. Silly idea. Had to do it.
You see coffee is about people. It´s totally meaningless without humans. My dog don´t drink coffee (though he has his own approach to my morning ritual). My dog thinks coffee smells wonderfull but tastes strange. Theres always parameters to work with.
Heres the goodiebag of the season.
To find the coffee for this season, you have to understand that i have been away from the roastery for a while. First things, first i spent some time reading the bibles of coffee roasting again. I even got the Gerhard. A. Jansen - Magic - art - science, coffee roasting book. Which for long has been the like the lost city of Atlantis in coffee roasting shelfes. I´ve been running some experiments again, so some of the coffees, like San Francisco needs a finer grind to reach potential or right extraction. Ahhh... I love this game. We have also launched the news that we are opening our coffee roastery downtown, with a new serving concept.
Catching up the vibe again, and that also includes a huge selection of inspirational music. Music is such a powerful medium to approach humans. So i found this great video a friend of mine made for Sigur Ros to sort of show how it feels like to gather around the roaster again. Fantastic feeling, sort of feels like beeing in love. With all the troubles and concerns that follows. Well, happy brewing - folks.

We have been buying Biftu Gudina since 2012. Its always a pleasure. Found in the portefolio to roasters like Koppi, Drop Coffee, Cimpson and sons and Nylon Coffee. Always a pleasure to have on the pallet. Now certified organic.
Etiopia, Yirgacheffe - Gedeb
Bright, floral, peaches, green apple, honey and coffee flowers.
New discoveries in high-end coffee. Crazy and elegant at the same time. Smells like bean spirit, tastes like heaven. Great clean cup.
El Salvador, Santa Ana - San Fransisco Natural
Supersweet, elegant, strawberries, kiwi and cooked apples.
Jose Antonio Salaverria is back. The dude has provided us with great coffees like San Antonio, El Molino, La Illusion and Los Pirineos. Always a pleasure to roast his coffee, though this is a more challenging one. But its always clean, wonderfull and a eye-opener.
Kenya, Kirinyaga - Mugaya AA
Cherries, intense, sweet, rose hips, rubharb & hints of black currant.
A Kenya is a Kenya right? I want a Kenya that has floral attributes, and we´re hunting it down on this coffee. A nice, weird and elegant coffee.
